Use organic vegan sugar that hasn’t been treated with bone char if you’re extra particular about how your ingredients are handled. - White or yellow onions can be used, but I like white onions for their crisp, pure flavor. I also advise buying sweet onion varietals like Vidalia and Walla Walla, if you can find them.
